Red King Salmon (Oncorhynchus Tshawytscha)

  • The largest of all salmon species, recognized for its high oil content, succulent texture and rich flavor.
  • Also called chinook or spring salmon.
  • Whole fish generally range in weight from 5 to 40 pounds, with dressed, head off fish weighting 4 to 35 pounds.
